There are times when you NEED something sweet and like us you may have eaten your “quarantine snacks” and now you’re down to Starlite peppermints and a few chocolate chips.
If you have peanut butter with just 3 ingredients you can make 9 or a dozen yummy gluten free cookies that will satisfy any sugar craving.
Preheat your oven to 350
Spray or lightly grease a cookie sheet
–1 cup peanut butter (I used 1/2 crunchy, 1/2 smooth)
**spray the measuring cup with Pam and the peanut butter will plop right out**
–1/2 cup sugar if you’re using Jiff. Other more natural butters may require more sugar
Mix well using a fork or spoon
For large cookies, drop by tablespoonful onto cookie sheet (teaspoonful for regular size cookies)
You’ll get 9 giant cookies or a dozen regular size cookies
Pour sugar into a dish/plate and find a glass with a large flat bottom
Dampen the glass, dip in sugar then press down cookies
Keep the glass bottom sugar coated or the cookie will stick
Bake at 350 for 12-16 minutes
Let sit on the cookie sheet for a few minutes because they will still be soft when warm
When cooled, gently lift them off the sheet with a spatula
Pour the milk and enjoy!
