Johnnie’s Gluten-Free Taco Chili!

On Tuesday I planned on making tacos and as the hamburger meat was frying I realized we had no tortillas.

I thought…chili!

Well, chili slowly evolved into what I’m calling Taco Chili!

Here’s how I made it:

Sauteed 1 Lb of hamburger & drained it well.

Added a small chopped sweet onion & small green pepper diced. Sauteed the veggies with the hamburger meat.

In a soup pot I mixed the following:

1 -15 oz can petite tomatoes

1-15 oz can crushed 

1 -15 oz can tomato sauce

*You can use a giant can of tomatoes crushed, diced, whatever you have on hand.*

1 can drained/rinsed black beans (kidney or pinto are fine)

1 small bag frozen corn (or you can use 1 can drained whole kernel corn)

I added 1 small can mild chilis (optional) and…

1 pack of mild taco seasoning(we use McCormick gluten free seasoning)

A l/2 package of Ranch dressing mix…really but, taste, you may want to add the whole package.

Stirred it well

Added the burger/onion/pepper combo

Added 1 can of water

Simmered and served with tortilla chips

Taco Chili

So good!
